version of sweet potato casserole. This is a dish my family always makes except
its loaded with butter and sugar! This doesn't take very long to make or use
very many ingredients.
1 small-medium sized sweet
potato
1T liquid egg white
2-4 T uns vanilla almond milk
vanilla
extract
cinnamon
truvia/stevia
pecans
method:
I cooked my sweet potato in the microwave on high for 5-7 minutes then pulled it
out to cool. After I could pick it up, I peeled off the skin and mashed it in a
small pyrex ramiken. When it was mashed I added the rest of my ingredients
except the pecans and stirred to combine. I stuck that in the oven for about
5-10 minutes (make sure you keep an eye on it because it easily will get dried
out) when that was finished I pulled it out and added a layer of crushed pecans
on top and devoured!
