As many of you know, I just got home from a river cruise. Definitely slacked on the healthy eating but I guess that's what vacations are for! On the other hand, having desserts prepared for you all day isn't a habit anyone should live by. But having the mother I do, needs her chocolate. Being the daughter I am, I made mint chocolate chip ones! These are paleo, gluten free, dairy free, and full of flavor.
Ingredients:
-1 scoop mint chocolate chip whey (I use cellucor brand)
-2T dark chocolate mint coconutter (I use sweet spreads brand)
-1/3 c unsweetened cocoa powder
-2/3 c stevia (or other sweetener of choice)
-3 whole eggs
-2t vanilla extract
-1 c pure pumpkin (I use canned, make sure it isn't pumpkin pie
filling!!)
-1t baking powder
-1t baking soda
-a tiny pinch of salt
Method:
Like many things I make, this is super simple. I just put all my ingredients in a bowl and stirred to combine. The coconutter is easier to mix if you melt it first- I just warmed it in the microwave for about 30 seconds. I had my oven preheated to 400F and baked for close to 25 minutes. I'd keep an eye on it just to make sure. When they were finished baking I let them cool and cut into 8 squares. You can easily double the recipe if you want more! Each brownie came out to about 100 calories exactly. Easy way to satisfy a sweet tooth and not ruin your diet. Enjoy!
