delicious. Here's one of my favorites to make on a cool morning:
1/4 c
pumpkin puree
1/4 c oats (ground into flour)
1.5
T coconut flour
1/4 c fat free cottage cheese
1
packet of truvia/stevia
1/2 c liquid egg
whites
2-4T unsweetened vanilla almond milk
a
splash of vanilla extract, cinnamon, and baking
powder
to cook these I preheat a griddle to 300
degrees. I combine all the ingredients in a food processor, spray the griddle
with coconut oil and fry like a regular pancake! for topping I have two favorite
ways:
1) banana slices, almond butter, crushed pecans, and
walden farms pancake syrup
2) pumpkin cream cheese icing (2:1
pumpkin puree to cream cheese + truvia/stevia), walnuts, almond butter, and
fresh pomegranate arils.
