Secretly been working on this beauty for a while.. It is a coffee crumb cake. It's perfectly healthy so makes a great breakfast as well as snacks or desserts. I know coffee cakes don't traditionally have coffee in them, but the flavored coffee adds a deeper flavor- not actually the taste of coffee. It can be made into muffins, a cake (square or circular), or loaf style like bread. Hope you enjoy!
Ingredients
Wet:
-2 whole eggs
-4 oz or 1/2 c unsweetened applesauce
-4 oz or 1/2 c unsweetened almond milk
-2oz or 1/4c very strongly brewed coffee. (I used crem brûlée flavored by brew la la brands)
-1T melted coconut oil
-1t vanilla extract
-1t butter extract
Dry:
-1.25 cups of dry oats pulsed into flour
-1 scoop cinnamon whey (I used cellucor. Vanilla also works or you can add extra oat flour)
-stevia to taste
-2.5 t baking powder
-1/2T cinnamon
Topping;
-3T butter (I used flaxseed oil butter)
-1/4 c oat flour (pulse whole oats I a blender or food processor. Don't actually buy oat flour!)
-cinnamon
-stevia
Method: I combined my wet then dry and mixed until combined. It's a pretty easy process! Then baked on 375F for about 35-40 minutes or so but I would keep an eye on it. I lined my dish with coconut oil to prevent from sticking! For the topping you want to melt your butter then slowly add in your other 3 ingredients until it forms a crumbly texture. You want the stevia & cinnamon to fit your taste!
When cooking this, you have 2 options- if you are making a cake/loaf style coffee cake you can pour half the batter into your dish, add your topping, and finish with remaining batter to have a layer in the middle. If you are making muffins or want a streusel topping, you can add after they are about 2/3 of the way finished cooking. Hope you enjoy! Let me know what you think if you try it out!!
