I love cooking with protein powder too much. It's a problem, really. Today I was going to make a loaf of bread, but that quickly turned into breadsticks. Hope you enjoy!
Ingredients:
-2 whole eggs
-1/2 c old fashioned oats (or other flour)
-2 scoops natural protein powder (I used true nutrition's unflavored grass fed whey)
-2 T coconut flour (or other flour)
-1/4 cup pumpkin purée (I use canned, not pumpkin pie filling!!)
-1/4 t sea salt
-1/2 t baking powder
-1/2 c milk (I use unsweetened almond milk)
Method:
Blend all your ingredients- I used a nutribullet, a blender also works. I preheated my oven to 320 F while making my batter then placed it in a greased bread pan lined with coconut oil (any oil works). I baked that for about 25-30 minutes but keep an eye on it to make sure it is cooked to your preference. When finished, pull out and let it cool. You'll notice it makes a super short loaf of bread. This is when you cut it into slices- the size of breadsticks!
Some things I used my breadsticks for are...
-cheesy garlic breadsticks: I melted flaxseed oil butter and crushed garlic in a pan then brushed over the breadsticks and sprinkled cheese and parsley on top and broiled until the cheese was melted.
-mini pizzas: Layer tomato sauce, cheese, veggies, and meat if you'd like. Bake until cheese is melty and eat!
-tuna melt: layer tuna (I used canned) and mozzarella cheese then baked until nice and melty!
-croutons: cut into smaller squares and drizzle in oil (I used olive) and any spices you'd like then bake until crispy!
