I've been experimenting with cauliflower recipes and this is a new favorite so I had to share!
(For 2 servings)
Ingredients:
-1/4 head cauliflower
-1 whole egg
-1/3 cup cheese (I used mozzarella)
-2T coconut flour (or other flour of choice)
-sprinkle of salt + pepper
-herbs of choice (I used a frozen pizza seasoning from Penzey's. I think any Italian seasonings would work best)
Method:
In a food processor, process your cauliflower until it has the texture of rice. Place in the microwave for 2-3 minutes or until steamed. Let it cool or you will burn yourself in the next step!!! When cooled, you need to squeeze all the moisture out of your cauliflower. I put mine in between 2 cloths and squeeeeeeeezed. If you have a milk bag that's preferable, but a paper towel will work too. Make sure all the water is out though, otherwise when you bake them they will steam and won't turn crispy. When your cauliflower is dry just mix all the other ingredients until it forms all ball. Place the ball of a greased pan and form into a big square. I baked my square on 350 F for 20-25 minutes, or until crispy. Pull it out, let it cool, slice, and enjoy!
You can top it with tomato sauce, veggies, more cheese, and meat to make a pizza or you can enjoy them as cheesy breadsticks on the side. Either way, these were delicious!!
