I seriously love cooking. Apparently my parents don't mind either so that's how I've spent my whole morning! One of my favorite recipes now- I bring you protein blueberry muffins!
Ingredients:
🔹1 and 1/4 c oat flour
🔹1/4 c coconut flour
🔹4 packets truvia
🔹2t baking powder
🔹1t baking soda
🔹1t cinnamon
🔹1 whole egg
🔹3 ripe bananas
🔹splash of vanilla extract
🔹1 c blueberries
🔹1/3 c milk (I used skim, almond works as well)
🔹1 c unsweetened applesauce
🔹1/2 c walnuts
🔹4T whey (I used cinnamon swirl)
Method: I blended my dry ingredients to make sure everything was evenly distributed. Then I took all of my wet ingredients and blended until evenly distributed. I left out the blueberries and walnuts until then end. I stirred my wet and dry until combine then gently stirred my blueberries and walnuts to make sure they wouldn't crush or get mashed. You should have. A lot if batter! I preheated my oven to 375 F and baked for about 20-25 minutes. I made about 20 muffins, enjoy!
