Ingredients :
wet:
-1 whole egg
-50g egg whites
-95g pumpkin puree
-1 oz unsweetened vanilla almond milk
-30g unsweetened applesauce
dry:
-dash of butter extract (optional)
-dash of baking powder
-dash of cinnamon
-60g oat flour (blended old fashioned oatmeal would also work)
-10g coconut flour
-10g vanilla whey protein powder (I use cellucor brand. just a little because I like the flavor and texture, doesn't really add much protein. You could sub for a little more oat flour and a tsp of vanilla extract if you don't have this)
-sweetner of choice (I used 3 packets of truvia and about 5 stevia drops)
Method: I blended my wet ingredients and my dry ingredients separately then stirred until well combined. I'm always tempted to lick the batter but I have to remind myself there is raw egg, so don't do that! Next I got my muffin tins and filled them each about 2/3 of the way full. I already had my oven preheated to 375 degrees on the convect option.. I set my timer for 15 minutes at first then checked them to see if cooked all the way through. They were cooked, but I like them a little extra done so I opted for another 3-5 minutes. Smell delicious as always!
