I bring to you... BANANA BREAD MUFFINS! This is a favorite of mine for breakfast but so many recipes seem to be full of sugar and unhealthy fats. Not these! Hope you all enjoy and please send me a picture if you decide to try these out- you won't regret it!
Ingredients:
Wet
🔹4T butter (I used flaxseed oil butter but ghee is also a good option)
🔹2T coconut oil
🔹2 ripe large bananas
🔹2t vanilla extract
🔹2t butter extract
🔹1/2T cinnamon
🔹1 large egg
🔹2T agave (or honey, maple syrup)
Dry
🔹1c oat flour
🔹1/4c coconut flour
🔹1/2c raw old fashioned oats
🔹2T flax meal
🔹3T vanilla whey protein (can omit)
🔹5 packets truvia (or other sweetner)
🔹1/2T baking soda
🔹1/2T baking powder
🔹1/2c walnuts, lightly crushed
Method: preheat your oven to 375 degrees F. Melt your coconut oil and butter together then mash your two bananas and add to the mixture. I used a hand mixer to combine the two well. After combined, I added the rest of my wet ingredients and blended again. In my nutribullet, I combined all of my dry ingredients except the walnuts and raw old fashioned oats. I blended those well then combined in with the wet and used my hand mixer until well combined. Next, I sprinkled in my raw oats and crushed walnuts and stirred by hand. After combined you can cook in muffin tins for muffins or a loaf pan for bread. The cook time depends on what you're cooking. I made 12 large and 4 small muffins with mixture and cooked about 14-16 minutes (for the large).
I know it may seem like a long list of ingredients, but for me they were all things I already had on hand so it was a quick and fun recipe to make. I will warn you though.. When these come hot out of the oven you will eat one. Or two. Or three- whoops!
