Made this as a side for dinner and was so pleased with the way it turned out I had to share it with you all!
Ingredients:
-fresh green beans
-1 can garbanzo beans (chickpeas)
-1 can kidney beans
-3-4T diced red onion
-4t Dijon mustard
-3T vinegar (I used grape vinegar)
-1T olive oil
-2t agave (honey works too)
-garlic powder
-onion powder
-cracked black pepper
-cayenne pepper
Method:
I started my washing my green beans and rinsing my canned beans. I combined those three into a large bowl then mixed my marinade in a seperate bowl. The liquid ingredients I measured but the spices I did by taste. I personally like it super peppery, so I added lots of pepper. If you like it sweeter, add more agave. If you don't prefer it as tangy, use less vinegar!
This was awesome to have prepared for lunches/dinners throughout the week. I like using it on top of my salads during lunch with extra things like chicken, olives, or couscous. Since it has a marinade on the beans, you don't need it on your salad. It's also great as a side for dinner. Enjoy!
