I used pumpkin seeds in this recipe, but any nut or seed can just as easily be used. I enjoyed these in trail mixes, over yogurt, or even plain. Great on-the-go snack!
Ingredients:
-1 cup pumpkin seeds (mine were still in the shell and boiled in sea salt. You can skip that step if you'd like)
-2 t stevia (or sweetener of choice)
-1/2 T cinnamon
-1/4 t nutmeg
-1/2 t vanilla extract
-1 heaped tablespoon of coconut oil
Method:
I started by preheating the oven to 350 F. I melted my coconut oil in a small bowl then stirred in the vanilla, stevia, cinnamon, and nutmeg until mixed well. All that's left to do is toss in the pumpkin seeds until the mixture has well-coated them all. Place in the oven for 8-10 minutes or until they are nice and golden! I put mine in an air-tight mason jar, hope you enjoy!
