the Christmas season calls for baking, so here's my version of a healthy protein-packed cheesecake!
Ingredients:
-1 scoop whey (I used chocolate fudge brownie by the brand true nutrition)
-1 whole egg
-1 egg white
-1 container or 6 oz. of plain yogurt (I actually used a container of elliquark, and it worked great!)
-1 c fat free cottage cheese
-1/2-2/3 c stevia (based on preference)
-2T vegan sf/df/gf chocolate chips (I used enjoy life brand)
Method:
In a blender I combined everything except the chocolate chips and mixed until smooth. Next I preheated my oven to 250F and lined a muffin tin with 12 mini muffin cups. I even divided out the batter then sprinkled my chocolate chips and a dash of cocoa powder (optional). When I oven was preheated, I baked at 250F for 15 minutes then left them in the oven while I upped the temperature to 300F, and when preheated set another 15 minute timer. When that ended I pulled them out, let them completely cool, and set in the fridge to harden. This makes 12 muffins or 6 servings, right at 100 calories for 2 cheesecakes- mostly all protein. Enjoy!
