Ingredients:
-1/3 c oats pulsed into flour
-1/2 scoop cellucor peanut butter marshmallow whey protein powder
-3T pumpkin puree
-1 packed of truvia/stevia
-3 large egg whites
-2T coconut flour
-a sprinkle of cinnamon
-a splash of vanilla extract
-1/2t baking powder
-non stick spray (I use coconut oil)
method: Like most of my recipes, this is super simple. I put all of my ingredients into a blender (I used a nutribullet, a regular blender or food processor would also work) then sprayed my heated waffled pan and cooked until it looked nice and toasty! For toppings I used banana, earth balance coconut peanut butter, and walden farms pancake & caramel syrups. Perfect alongside some coffee!
