Powdered peanut butter is absolutely delicious. The fat content is so much lower (not saying fat is a bad thing, but when you eat as much nut butter as I do this just means you can have more) and the protein is much higher. At only 25 calories a tablespoon it makes great sandwiches, sauces, or in my case.. Peanut butter cookies!!
Ingredients:
-1/4 c peanut flour
-2 egg whites (or 1 whole egg)
-1 can white beans
-1/3 to 1/2 c stevia
-2T coconut flour
-2T almond flour
-1/4 c plain Greek yogurt
-1t baking powder
-1t baking soda
-1t vanilla extract
Method:
I blended my dry ingredients to make sure it was evenly distributed. Next, I drained and rinsed my beans since they came from a can (if you are boiling the beans yourself you can skip this step). I added the rest of my wet ingredients into the blender and blended until it was all very well mixed. I preheated my oven to 375 F then spooned my mixture onto a tray lined with coconut oil. Bake for 10-12 minutes and enjoy!
The texture of these is more like a cake cookie than a traditional dense peanut butter cookie. This is preferable to me, but if you prefer differently these can also be made into peanut butter muffins or a loaf of peanut butter bread. They freeze well so you can make a large batch and keep for a sweet treat throughout the week!
