Ingredients:
-1/4 c coconut oil
-1/2c shredded coconut
-1c cooked quinoa
-2 egg whites
-2tsp vanilla extract
-1t baking powder
-1/2tsp sea salt
-3/4c oat flour (or any flour of choice)
-1/2c stevia (or sweetener of choice)
-dark chocolate (I chopped 3 sugar free dark chocolate squares, amberlyn chocolates brand)
Method:
Simply blend all of your ingredients (except the chocolate). I preheated my oven to 375F and took and cookie scoop to evenly distribute the batter onto my cookie sheets. I decided to make mine into 24 cookies, but of course you can make them bigger or smaller depending on your preference. After they were spooned out, I chopped my dark chocolate and sprinkled overtop. Baked around 15 minutes or until cooked through and enjoy! I also froze half the batch, which thawed perfectly fine and still tasted just as great!
