My mom keeps telling me she's craving almond joys, so I took that as a challenge to make a new recipe. The base of these is coconut with a dark chocolate topping. I made mine and the cookies, but you could easily make them into bars or any other shape you choose.
Ingredients:
-2T coconut butter (I used essentially coconut brand)
-1/4c uns shredded coconut
-1/4c almond flour
-1/2 c old fashioned oats
-2T coconut flour
-1egg white
-1t baking powder
-1/4c stevia (or sweetener of choice)
Topping:
-2 squares sugar free dark chocolate (I used amberlyn chocolates)
-1/2T almond milk to thin
Method:
Preheat oven to 350F while you mix all the ingredients to your cookies. Separate into whatever shape you'd like to cook them into (I made 12 cookies) then bake for 7-8 minutes. While those are baking, you'll want to melt your chocolate squares. Then drizzle on top and let harden into the fridge to set the icing! If you'd like more, feel free to melt more chocolates. I also tried these where I added in their chocolate covered almonds instead of melting the drizzle on top. Both turned out fabulous, enjoy!!
